For students, eating at college is an entire new ball game, with late night pizza delivery and swinging by the food cart. Just in time for summer I’d like to share my recipe for Mock Crab Cakes, made out of fresh Zucchini!

On the days that I have to babysit ‘Lil Moomette and her brother, I can easily make pancakes for the grandkids and know that they’re starting off the day with a good breakfast!
